SAKE SCHOOL: Sake, often referred to as "The Drink of Gods" by the Japanese, is a beverage made from water, rice, an enzyme (Koji-kin), and yeast. The alcohol content ranges between 15 to 18%. Sake is brewed like beer and served like wine. Lower grade sake are served warm and the premium sake is served chilled and has "umami", the 5th taste, which is more of a sensation. The premium sakes usually have NO sulfites so your body will be less likely to deal with a hangover. TYPES of SAKE Junmai- only pure ingredients, no additives, higher acidly which makes it good with food. Jumai Tokubetsu- rice is milled 35% and alcohol is added. Jumai Ginjo- rice is milled 50% and is fermented longer so the taste is fruiter. Junmai Daiginjo- rice is milled at least 50%, has purer water, cold fermentation, ultra premium. Futsushu- made for the common Japanese people and is not found in the USA. Honjozo- futsushu with added alcohol. Genshu- junmai diluted with alcohol. Nigori-sake -junmai, unfiltered and graded, creamy taste and look. Nama-sake- draft style sake, not pasteurized, kept cold and has a short shelf life. Taru-sake- aged in oak casks which gives it an earthy flavor, leafy. Koshu/Kijoshu- an aged, dark, sweet that is complex with low acid. Schools out! Time for MORE Sake..... |
